Menu Plan Monday

Here’s what’s cooking this week chez moi. I should make this a regular feature, because when I write out what I plan to make for the week all at once, I save time during the rest of the week hunting down recipes, coming up with ideas, and substituting ingredients that I would have had for a recipe had I not already eaten it for a snack, etc. It just makes my life easier to write a menu plan each week.

Monday:

To Do: Start chicken stock, soak oats

Tuesday:

B: Oatmeal with blueberries and coconut oil

L: Romaine, tomato, tuna salad with split pea soup (leftover from Sunday)

D: Rice, ham and broccoli casserole

To Do: Brine pork roast, bake cookies

Wednesday:

B: Eggs and citrus salad

L: Leftover casserole

D: Pork loin roast with sweet potatoes, kale and beets

To Do: Bake spelt biscuits

Thursday:

B: Plain yogurt with banana, nuts and cinnamon

L: Leftovers from dinner

D: Meatballs (grass-fed beef) with tomato sauce over squash, spelt biscuits with butter

Friday:

B: Yogurt banana blueberry coconut oil smoothie

L: Meatballs on salad with avocado

D: (Fish Friday) – Fish Thermadore (wild sole rolled in cheese sauce) with greens and rice

To Do: Christmas baking

Snacks:

Spelt biscuits, apples dipped in peanut butter, pears, oatmeal spelt raisin cookies

There’s more pork than usual on the menu this week. That’s because last weekend, we picked up a nitrate free smoked ham and a loin roast from our favourite farmer at the organic farmer’s market. She raises certified organic, pasture raised heritage breed pork. Deeeeeeelicious! Also, you might see that I am baking with spelt this week. There are a few recipe posts in the works, so stay tuned!

    Love love love the way you add a “to-do” section on your meal plan. I need to start doing that!

      It works really well for me, because otherwise I might forget to look ahead at what I’m making the following days, and then it’s too late for certain things to be done properly! Now, if only I could be organized enough to make a menu plan EVERY week!! :)
